The liquorice root (the underground part of the plant) is subject to a real utilisation. It is very much utilised, other than the transformation into juice, also in cosmetics, in the herbal field and to produce distilled products.

The root is generally extracted in the autumn when, contrary to the spring, it is richer while the aerial part is drier. The digging for the root can, in any case, occur in other periods since there is land (clayey ground and/or hard to reach) impassable with winter rains.
